Delaware County restaurant inspections

Comments on food-safety inspections conducted last week by the Delaware County Health Department of establishments with liquor licenses, which was 10 of 12 with violations.:

• Person in charge is not a Certified Food Protection Manager who has shown proficiency of required information through passing a test that is part of an accredited program.

• Date marking is not on any foods throughout facility.

• Yellow spray bottle not properly labeled.

• Exterior front door allows access for pests.

• Several roaches observed, dead, on glue board under stand-up freezer.

• Ice scoop observed sitting in ice bin at bar with handle contacting ice.

• Cutting board at bar observed heavily stained and worn. The cutting board can no longer be washed and sanitized properly to prevent pathogen growth.

• Heavy grease accumulation between deep fryers.

• The women’s restroom lacks a covered receptacle for disposal of feminine hygiene products.

• Person in charge had no food employee reporting agreement.

• Establishment does not have procedures for employees to follow when responding to discharging of vomitus or fecal matter.

• Cutting board is not clean to sight and touch. Wash, rinse, sanitize routinely.

• Food storage containers are not labeled with common name of the food in prep refrigerator.

• Grease and soil accumulation present on ventilation hood system.

• Accumulation of bottle caps on floor of bar.

• Front door propped open with no protective screening.

• Observed several boxes stored outside of facility, not in a closed waste handling unit.

• Person in charge is not present at the food establishment during all hours of operation. Provide an appropriate number of management staff.

• Slicer food-contact surfaces not clean to sight and touch. Wash, rinse, sanitize every four hours.

• Exterior door screen has holes, which may allow access for pests.

• Beverage container stored in ice to be used for consumption. Ice intended to be used as food may not be used to cool food or other items.

• Nonfood-contact surfaces of dim sum steamer (bricks surrounding) are not smooth and easily cleanable.

• The handwashing sinks are blocked by food equipment and beverages at the cocktail room and Irish pub bar areas.

• A sign or poster that notifies food employees to wash their hands is not provided at the Irish pub restroom and the handwashing sink in the main bar area used by food employees.

• Disposable paper towels ar3 not provided at the hand washing sink at the event bar.

• Observed three 1 gallon containers of milk and green peppers stored in the refrigerator that are spoiled.

• Observed food items stored uncovered in the walk-in cooler and outdoor bar refrigerator.

• Observed knives stored on the magnetic knife holder that are not clean to sight and touch.

• A working chemical bottle is observed stored next to beverages in the main bar area.

• Employee personal items observed stored in the food prep area.

• Food storage containers are not labeled.

• Observed live fruit flies in the outdoor bar and cocktail bar area of the food facility.

• In-Use Utensils are stored incorrectly. Observed tongs stored on the side of a trash can. Observed scoop handle stored in flour. Observed knives stored between table edges.

• Clean utensils are not observed stored inverted.

• Test kits or other devices are not available to the employees to measure sanitizing solution concentration.

• Raw hamburgers stored above ready-to-eat sauce.

• Can opener blade food contact surface is soiled with dried food residue.

• Equipment not in good repair: Handwash sink beside soda fountain is not operational. Several other handwash sinks available within 25 feet without obstruction. Pizza cold-hold prep unit is leaking into pans under unit.

• Soil residue present on wall of walk-in cooler behind shelving.

• Can opener is not clean to sight and touch.

• Soda gun is not clean to sight and touch.

• In-use wiping cloths are not stored properly.

• Outside waste receptacle lid/cover not properly secured.

• Mop was found stored incorrectly in-between use.

• Person in charge is not a Certified Food Protection Manager who has shown proficiency of required information through passing a test that is part of an accredited program.

• Liquid hand soap not provided at the hand washing sink.

• Disposable paper towels not provided at the hand washing sink.

• A sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees.

• A thermometer is not provided in all refrigeration units.

• Establishment does not have minimum requirements for a service sink for cleaning of mops and floor cleaning tools and the disposal of mop water.

• Mop was found stored incorrectly in-between use.

• A sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees.

• Iced beverage dispensers are not clean to sight and touch.

• Soil residue present on air vents in the walk in refrigeration unit.

Most of the violations are handled on the spot and a few require follow-up visits.

All inspections were routine.

This week’s clean bill of health: Rudy’s Tavern, 7160 Marshall Road, Upper Darby, on a routine inspection; Erin Pub, 36 W. Winona Ave., Norwood, on a routine inspection.

Tinicum Township reports through the Pennsylvania Department of Agriculture website, but didn’t have an inspection. Tinicum is the only one of seven Delaware County townships that don’t rely on the county health department for inspections.

Governmental entities are not obligated to report the results of food-safety inspections to the public. It’s unclear if any of those townships provide public access to food-safety inspections.

The Daily Times make minimal corrections to spelling, capitalization and punctuation from the reports.
